2 months...
So it's been 2 months now - i wonder how many of you are still checking this for the latest news... (comment down below if you are = P)
Work is going along fine and i have learnt a bit now about what property mangment is.. (a good start i'd say)
Now that the £ are coming in Nick and I have been able to think about some of the hoildays we would like to take. Diving in the Red Sea, Sailing in Croatia and a trip to the Pyramids are all posibilities plus weekends in Madrid and Prague appear to be kinda cheap at the moment... if only i didn't get paid monthly...
Home life is good and for those of you who really know me... guess what my room is clean! and i even bleached the bathroom from floor to ceiling last night! Go Girl!
I'm really enjoying messing about in the kitchen. Made a awesome pasta dish last night!
Creamy chicken and Mushroom Pasta
(note i am not one for measuring ingredients so here were the basics and some guide as to how much to use...)
1 chicken breast - diced
1 onion - diced
1 garlic clove - crushed
Mushrooms - at least 20 small ones... cut in to quaters (or what ever you like..)
1 cup chicken stock
2 slugs of brandy
200ml cream
cook chicken in pan first (be sure to add soem oil to the pan)
once just cooked remove from pan and set aside
add onion and garlic to pan and cook til onion is clear/brown
add mushrooms and cook for o about um 5 mins?
add chicken stock and brandy and cook until all the alcohol has evaporated
add the cream and brign to boil
serve with pasta and a nice glass of wine

ok - just published and re-read and i forgot - if you want to spice it up and a tiny dash of ground chilli or chilli flakes - hot hot hot

Cherry, I read your blog and Nick's everyday at lunchtime. I kind of relive my life in the UK through your posts.
I'd highly recommend a trip to Prague. A fantastic place and it was really cheap back in 2000. It was the only city holiday that Rita & I took where we brought money back after a week there.
Keep writing and I'll keep reading :-)

Hi Yes I am still reading too. Now a comment about the recipe which sounds delicious. I'm pretty sure that you heat cream through but don't boil it. I shall be trying you recipe though M xxx###
